I wanted to try a bread machine for a long time and I was very excited to get Breadman BK2000B because of the features it has - multiple modes, including dough only and bake only cycles, folding paddles, and an option to make one large or two small loaves.
The first recipe I tried was the whole wheat from the book that came with the machine (see pictures). My family liked it and I made it again. This recipe was easy to make - just put the ingredients in the pan and start the cycle. Both times bread flavor and texture were consistent.
Inspired, I decided to venture into baking a sourdough bread. I purchased San Francisco Sourdough Starter, and followed the instructions for reviving and feeding it. I learned that sourdough needs more time to rise than dough made with quick yeast. I decided that instead of using a full cycle setting, I would use the dough cycle, then let sour dough rise, then use the bake cycle. It worked well.
The machine bakes good bread and is easy to operate and to clean. However, I wanted to address two problems I encountered. First, out of the four loaves that I baked, all four were uneven. The paddles move a ball of dough around the pan, and, when they stop, the dough ends up on one of the sides of the pan, so the bread comes out taller on that side. The other issue is that with three loaves the folding paddles did not fold and became baked inside the bread. They were holding loaves like hooks and made it very difficult to shake baked bread out of the pan. Going forward, I will have to make sure the paddles are fully folded and the dough is evenly distributed inside the pan before baking starts to avoid the problems I just described, but then the process becomes more involved than I thought it would be.
Overall, this is a good bread machine if you are looking for a "set it and forget it" type of appliance, but I think good bread can be relatively easily made with a stand mixer and an oven.
